What types of rice can I cook in Fuji?
We designed Fuji primarily as a dedicated rice cooker, and its advanced cooking technology allows it to prepare a wide variety of rice types with excellent results. Rather than having a single generic rice programme, Fuji has five dedicated rice-cooking options, each designed to suit a particular type of rice or cooking method.
‘WHITE’ – White Rice
The ‘WHITE’ setting is Fuji’s standard programme for cooking white rice. It is suitable for everyday white rice and is designed to produce rice with the correct texture, moisture and consistency.
When ‘WHITE’ is selected and the setting is flashing, you can choose the appropriate rice type using the ‘Rice Type’ button on the control panel. This allows you to select between:
Short grain – ideal for Japanese-style rice, sushi rice and other short-grain varieties.
Long grain – suitable for varieties such as Thai, basmati and other long-grain white rice.
This additional rice-type selection allows Fuji to adjust its cooking process to better suit the characteristics of the rice being prepared.
‘YUMAMI’ – Enhanced White Rice
The ‘YUMAMI’ setting is also designed for cooking white rice, but it uses a different, carefully phased cooking cycle to the standard ‘WHITE’ programme.
Fuji uses controlled changes in cooking temperature and timing to encourage the rice to develop more of its naturally occurring sweetness. The extended and carefully controlled cooking process helps to draw out sugars and other flavour compounds naturally present in the rice.
The result is rice that can have a fuller, sweeter and more satisfying flavour, with a particularly pleasant texture. We call this programme ‘YUMAMI’ because the intention is to produce rice that is so flavoursome and satisfying that you want to keep eating it – in other words, rice that is particularly ‘moreish’.
‘BROWN RICE’ – Brown Rice
The ‘BROWN RICE’ setting is specifically designed for cooking brown rice and can be used with both short- and long-grain brown rice varieties.
Brown rice has a tougher outer layer than white rice, so it requires a different cooking process, including appropriate soaking, cooking temperatures and cooking time, to properly hydrate the grains and produce a pleasant texture.
Fuji's dedicated brown rice programme can be used for varieties such as pearl brown rice, brown sushi rice and Thai sticky/glutinous brown rice, making it much easier to achieve consistently cooked brown rice without having to work out the correct cooking process yourself.
‘GABA’ – GABA-Activated Brown Rice
The ‘GABA’ setting takes brown rice preparation a step further. Fuji first soaks and warms the brown rice for an extended period, creating conditions that encourage the natural formation of gamma-aminobutyric acid (GABA) within the rice.
This style of preparation is traditionally known as ‘hatsuga genmai’, or germinated/activated brown rice. The process encourages the brown rice to begin germinating, which increases its GABA content before the rice is subsequently cooked.
GABA is a naturally occurring compound found in the body and in a number of foods. GABA-activated brown rice has attracted particular interest because of its nutritional profile and the potential health benefits associated with increased GABA content.
Fuji therefore provides a convenient way to prepare GABA-activated brown rice at home, without the need to separately soak and germinate the rice yourself.
‘STEAM’ – Steamed Rice
The fifth rice-related option is ‘STEAM’, which allows you to use Fuji for steaming food rather than cooking rice directly. Using the supplied steaming accessories, you can steam ingredients such as vegetables, fish and other foods while taking advantage of Fuji's controlled heating and timing.
Together, these programmes make Fuji much more than a basic rice cooker. From everyday white rice and flavour-enhanced Yumami rice to brown rice and GABA-activated rice, Fuji provides dedicated cooking cycles that are specifically designed around the characteristics of each type of rice.
