How does the Fuji IH rice cooker cook differently to my old rice cooker?

Induction Heating (IH) rice cookers cook differently from conventional rice cookers, and this difference can affect the way rice behaves during cooking.

With a conventional rice cooker, a heating element beneath the inner bowl heats the bowl from the outside. In an IH rice cooker, magnetic coils create a rapidly changing magnetic field that causes the compatible metal inner bowl itself to generate heat. This means heat is produced directly within the bowl and its contents, rather than being transferred from a separate heating plate.

The result is very fast, responsive and evenly distributed heat application. The magnetic field and resulting eddy currents allow the cooking temperature to be controlled and changed much more quickly than with a conventional heating system. This is particularly useful when combined with Fuji's advanced cooking programmes, which can alter temperatures at different stages of the cooking process to achieve the desired rice texture and flavour.

You may need to make small adjustments

If you are moving from a conventional rice cooker to an IH model, you may find that the same rice and water quantities you previously used need a small adjustment. This is perfectly normal and does not mean there is anything wrong with the rice cooker.

Because IH heating is more direct and responsive, the rice can react slightly differently to the same amount of water. Different rice varieties, brands, harvests and even how thoroughly the rice has been washed can also affect the final result.

The most common adjustments are:

Rice is too soggy or wet
→ Try using slightly less water next time.

Rice is too dry or overcooked
→ Try using slightly more water next time.

Make small adjustments rather than changing the water quantity significantly. Once you have found the ideal rice-to-water ratio for the particular rice you use, you should find that Fuji produces consistently excellent rice, time after time.

It is worth taking a little time to fine-tune your preferred quantities. Different types of rice naturally require different amounts of water, so there is no single ratio that will work perfectly for every variety.

IH can also be more energy efficient

Another benefit of IH technology is that it can be more energy efficient than many conventional rice cookers, despite IH rice cookers generally having a higher rated wattage.

This may seem counterintuitive at first. A higher-wattage appliance does not necessarily use more electricity overall because wattage describes the rate at which electricity is consumed while the appliance is operating, rather than the total energy used for a complete cooking cycle.

An IH rice cooker applies heat directly to the inner bowl through electromagnetic induction. The heat is generated quickly and precisely where it is needed, with less energy lost through the transfer of heat from a separate heating element into the bowl.

The combination of rapid heat generation, precise temperature control and direct heating can therefore make IH cooking highly efficient. Actual energy consumption will, of course, depend on the cooking programme selected, the quantity of rice being cooked and how long the cooker remains operating.
